VEGGIE SPAGHETTI BOLOGNESE
Serves 2 – 3
300g/10½oz quorn mince, frozen
15ml/1tbsp olive oil
1 onion, chopped
7floz/ 200ml vegetable stock
1 large can chopped tomatoes
15ml/1tbsp tomato puree
10ml/ 2tsp mixed herbs
10ml/ 2tsp vegetarian gravy granules
100g spaghetti
Cook spaghetti in a pan of salted boiling water.
Meanwhile, heat oil in a large pan. Fry onion until soft.
Add chopped tomatoes, then the quorn mince and pour the vegetable stock over the top of the mince to help it defrost. Stir well to so that the quorn absorbs most of the stock.
Add tomato puree and gravy granules and stir.
Sprinkle over mixed herbs and allow to simmer for about 10 minutes.
Place spaghetti around the edge of the plate and serve the quorn mixture inside it.
