Fantasy Veggie Dinners - JAMES DEAN

James Dean was born in 1931 and raised on a farm in Indiana. He is a movie legend with a reputation based on a mere trio of movies. On September 30th 1955, his Porsche Spyder collided with another car and he was killed instantly, aged just 24. He had just finished filming his scenes for ‘Giant’, the great Texan epic.
If he came to dinner he would, therefore, probably feel at home with a bit of Tex-Mex so I would serve these Veggie Enchilladas.

ENCHILLADAS

2tbsb olive oil
1 onion, finely chopped
1 300g/ 10½oz pack Quorn mince
1tsp chilli powder
1 large tin chopped tomatoes
1 large tin kidney beans, drained
6 flour tortillas
200g/ 7oz grated cheese
1tbsp mixed herbs
300ml/10fl oz vegetable stock

Heat oil in a pan and soften the onion. Add the tomatoes.
Add the mince and pour over the stock. Then add chilli powder, herbs and kidney beans.
Simmer for about twenty minutes.
Preheat grill.
Divide mixture between the tortillas and roll up. Place them side by side in the dish and sprinkle cheese over the top.
Grill until the cheese is golden and bubbling.
